Our pristine Organic oil creation starts with the hand harvesting of Organic green olives. Regardless of the amount of olives collected, they are all taken to a neighboring organic cold press mill the same day. Once there, the olives are processed at temperatures that never exceed 27 degrees Celsius. We then watch how the olives are de-leafed and sent for malaxation in an FDA registered, EU certified, Organic, state-of-the-art oil mill. At the mill, the olives are centrifuged for oil separation. From start to finish, the entire process takes about two to four hours. At the end, we are delighted by the sight of our “green gold’ flowing from our tanks to our bottles. Currently, only the 500 ml (16.9 Fl Oz) bottle is offered.
In our production process, there is no oil waiting or standing in tanks for long periods of time, and there is no metering of taste. Our oil is a combination of the Spanish Arbequina and the Manzanillo. This produces a very fruity and lively flavor that is also grassy, peppery, herbaceous, and minty. We guarantee that once you taste our olive oil, you will realize that no other one will stand a chance against our Almeria Gold!
Since we harvest our green olives early, the oil percentage is about 21% less and the cold press lowers the amount of oil to about 20%. Using the cold press preserves the polyphenol content and the flavonoids of our oil. Through this process, our oil becomes aromatic with lots of olive herbal flavors and heart-healthy polyphenols. Green olive harvesting also means the acidity in the oil, is less. Our oil rarely makes it to 0.2%, which certifies it as naturally Extra Virgin (oils with acidity from 0% to 0.8%). Due to the low peroxide value in our oil, a longer shelf life of two years is promised. For all our chemical analysis, we use an International Olive Oil Council (IOC) certified laboratory.
The struggle for water by olives can be compared to the similar struggle of grapes for water; the more the struggle, the better the wine. In turn, the more the olives struggle for water, the more aromatic and rich the oil becomes.
